Pastured pork tenderloin medallions wrapped in pancetta and fresh sage. Sweet, salty, juicy, and packed with flavour, these ready-to-cook fillets are a customer favourite. We source whole, pasture-raised pigs from ethical farmers, including Tallabung Pork, a boutique producer in the Lachlan Valley region of NSW. Tallabung specialises in rare black-haired breeds that roam freely on open pastures, producing rich, sweet-flavoured meat. All the pork we source is pasture-raised and free from antibiotics and hormones.
